Ok so i see i have 5 minor league players assigned to my team. I understand the levels and years i think but once selected via draft, are they mine forever? Can FA be signed to minors?

They have a number of yrs assigned to them. When you draft you can assigned up to 5 yrs then they must be signed or released. If they reach 50 ip or 150 ab then they need to be signed at the end of the yr. You can sign to a major league contract anytime you want including when they run out to keep them from returning to the player pool
We have 2 drafts every year in which we draft our minor league rosters. The Milb draft is held every February. It goes 6 rounds. The Entry draft is held every August (roughly) and currently goes 2 rounds, but we plan to increase it to 3 rounds next season (2025).
Every team receives a draft pick in every round. Some teams trade their picks, some trade for them (guilty).
You can sign a minor league player in your minors at any time during their years of control. The maximum term they can be signed to is 5 years. The minimum salary you can sign them for is $600k. Most minor league players are signed to a 5 year / $600k contract. It is the owners choice on how many years to sign a contract with.
When their contract expires, you have an option every season to sign 1 player with an expiring contract to a Qualifying Offer. You will hear this referee to “QO”. This is the only time you have an option to keep 1 extra year of control of 1 player. Once the contract expires, said player goes up for auction in our Free Agent Auction Bidding (FAAB). We do this every off season and it takes months to complete!
You can always bid on said player during the FAAB. No restriction on that. Technically, you could have control of a player for their entire career in the MLB, but they would have several different contracts at different terms.
